Around minute 3:00 of the nine minute presentation, there is a great cartoon showing how sugar is 50% glucose and 50% fructose. The glucose is metabolized throughout the body, but the fructose can only be metabolized in the liver. If the liver gets too much fructose sent to it, it metabolizes it into fat. If the body doesn’t have energy needs, that fat remains with us, and Lustig says this is why you see the epidemic of obesity. All these fat people are appearing now (1980s to today) because of processed foods, “low fat” foods (substituting sugar for fat), and the various soft drinks and fruit juices.
Dr. Lustig has suggested that sugar should be regulated like alcohol. What do you think? If sugar is contributing to the obesity epidemic (like William Davis says wheat is), how and where do we regulate it? Or do we leave it still to personal choice? Even though the people don’t know what the food is doing to them . . .
